In accordance with France’s alert management guidelines, scientific data show that there is a high risk to consumers whenever the level of Listeria monocytogenes contamination in a product exceeds 10,000 CFU/g, as the risk may persist even if the product is cooked by the consumer, since standard cooking practices do not guarantee the decontamination of a heavily contaminated product. --> For these reasons, any food product (including raw meat and raw fish) with Listeria monocytogenes contamination exceeding 10,000 CFU/g is considered hazardous
