Bei Glycidol handelt es sich um eine unerwünschte Substanz, die nach aktuellster Risikobewertung der Sachverständigen des EFSA-Gremiums für Kontaminanten in der Lebensmittelkette (CONTAM) eine genotoxische und karzinogene Wirkung aufweist (IARC-Gruppe 2A). Die Substanz 3-MCPD gilt ebenfalls als unerwünscht und weist nach aktuellstem Stand eine karzinogene Wirkung auf (IARC-Gruppe 2B). Die Höchstwerte für Glycidol und 3-MCPD werden im Gesamtfett des vorliegenden Produktes auch unter Berücksichtigung der erweiterten Messunsicherheit eindeutig überschritten.
