Las micotoxinas aflatoxinas, especialmente la aflatoxina B1, son un grupo de compuestos químicos tóxicos producidos por ciertos tipos de hongos que pueden contaminar alimentos como frutos secos, cereales, frutas secas y otros productos alimenticios. Estas micotoxinas son conocidas por su capacidad de causar cáncer y mutagenicidad, así como problemas en el metabolismo de los estrógenos, gastrointestinales o en el riñón. La exposición a niveles altos de aflatoxinas puede provocar toxicidad aguda, que puede ser mortal, generalmente por lesiones hepáticas.
