A compliance and risk assessment was carried out for the above-mentioned sample of sauce, which contains 61% chilli. (MRL for peppers also apply to chilli) To calculate the residue value in the input raw material, the measured residue values ​​must be increased by 39%. The data provided by the manufacturer do not indicate any procedures that could contribute to the reduction or increase of the residue value (e.g. heat treatment). The manufacturer also did not provide process factors for the mentioned pesticide residues in the preparation of chillli sauce from the basic raw material.
